Clean Eating Cleanse Day 2

Sweet Potato and Roasted Cauliflower Soup

The recipe for this soup can be found here in my previous post!  We have made this soup many times since my original post! I love it and there are only 7 ingredients.  Sweet potatoes, cauliflower, onion, garlic, olive oil, water and your choice of spices!  Seriously it is delicious!

I was starting to crave sweets tonight so I thought I would try and find a “dessert recipe” to try!  Remember – we are not eating sugar!  I thought it would be hard but stumbled upon a great blog: No Seitan, No Whey, We are XGFX!  This vegan and gluten free community offers a ton of what looked like delicious recipes!  I am not a huge chocolate craver, but I do LOVE apple crisp!  So I thought we would try their “Healthful Strawberry, Blueberry and Apple Crisp” recipe.  However again, we made some changes! We didn’t have any strawberries, so we used raspberries instead.  The recipe also called for 1 tbsp of brown sugar (to sprinkle over top) but we of course omitted this! So here is our recipe!

Raspberry, Blueberry and Apple Crisp

  • 1 cup blueberries
  • 1 cup raspberries
  • 3 apples, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 1/2 cup rolled oats
  • 2 tbsp honey (or maple syrup)
  • 1/2 tsp baking powder

Preheat oven to 375F.  Combine apples, raspberries and blueberries in a small pot with 1 cup of water and 1 tbsp of lemon juice.  Bring to a boil and simmer until fruit is tender (5 minutes).  Drain liquid and pour fruit into a shallow baking dish.  Combine oats, honey, cinnamon and baking powder into a bowl.  Top fruit with oat mixture.  (Here is where you would add the brown sugar and maybe some extra cinnamon).  Bake for 30 minutes.
